Sampayolo is a cellar placed in the council of
Petin de Valdeorras, province of Ourense, belonging to the D.O
of Valdeorras that it is one of the oldest D.O of Spain. We
are a young cellar and it is the result of the ambition of Javier
Garcia to recuperate the old wine yards of his family and the
traditional stock wine from Galicia, some ones more that one
hundred years old stocks wines.
The wines that we make are single variety wines
with Godello and Mencía. The single variety wines are
high quality wines elaborate with the target of to integrate
the ancestral craft techniques of the viticulture with the most
advanced process of the wine production. The combination of
the old traditional knowledge with the new oenology techniques
allow us to offer a high quality wines full of taste and flavour.
In despite of the early life of our cellar the traditional knowledge
of wine makers from Valdeorras is impressed in our wines.
The
Godello wine make for Bodegas Sampayolo is a single
variety wine. It is wine with a fine fresh fruit exotic and
green apple aroma; yellow light clear or straw; clarity colour
crystalline; brightness brilliant; good intensity colour; shades
greeny gold; good intensity bouquet; distinguished general impression;
medium finish; elegant flavour; light acidity; well built: harmonious
balance; gradation of 12.5º, delicate, well-balanced, length
and full complex.
Perfect as single drink. Good match with fish, starters, seafood
and vegetables. Serving temperature 8º to 10ºC.
The
Mencía wine make for Bodegas Sampayolo is a
single variety wine. With a intense red purple colour and elegant
fruit aroma, full of taste, well balanced alcohol- acidity,
well built, fresh and with a good length and complex. Limpid
clarity; crystalline brightness; medium intensity colour; ruby
shade colour; powerful intensity; cherry, blackcurrant and raspberry
fresh fruits aroma presents; rich general impression; very long
finish; well built tannis and firm acidity flavour; full bodied
and balanced.
Good match with red meat, hunting meat, lamb, pork and chess.
Serving temperature 14º to 19ºC.
One hundred years old stocks wines
The perfect mixture of grapes coming from stocks
wines more than 100 years old and some ones younger coming from
the news wine yards is the base of our wines. The pruning in
“espaller” gives to the raceme the right ventilation
and we use natural fertilizers to treat the earth.
The photobiology treatments are no aggressive
with the environment (not chemical products are allowed). During
the grape´s harvest, we check every day the sugar, gradation,
ph and acid, to guarantee the best grape’s ripe.
The fermentation is making with the last technology.
The use of modern stainless steel tanks allow us to have a perfect
control of the temperature during the fermentation The perfect
decant of the wine’s mud is favoured by the low temperature
of the Galician winter and using a traditional system to clear
it as egg’s white that is fully respectful with the environment.
